Vegan chef Margaret Coons founded her dairy alternative company back in 2015. Over the years, she has steadily grown her sales, starting in the Canadian market. But this year, plant-based investors are going Nuts for Cheese! Her fermented, dairy-free cashew cheese wedges have hit the U.S., and the expansion will continue, thanks to a new round of funding. The money will help Nuts for Cheese ramp up production of their brie, blue, and other cheese alternatives in their certified organic facility.
According to the company, Nuts for Cheese wedges are firm, but soft enough to spread, and can be shredded, sliced, and melted. The flavors range from mild and creamy to sharp and complex, thanks to their traditional culturing techniques. They even garnish each variety to look like their dairy cheese counterparts. For example, the Super Blue is marbled with spirulina and the Smoky Gouda has a smoked paprika “rind.”
